PRIMITIVO

CLASSIFICATION: Organic. Protected Geographical Indication.

COLOUR: red.

VINE: Primitivo.

VINES/HECTARE: 4500 vines per hectare

PRODUCTION AREA: Mesagne, about 160 meters above sea level, with high average temperatures and medium-low rainfall. The soil is composedof a mix of topsoil and day with a stony sfrata below HARVEST PERIOD: Second half of August.

VINIFICATION: Thermo-controlled maceration for about 10 days, followed by alcoholic fermentation with selected yeats at 24°C.

AGEING: in stainless-steel tanks for 1 years, then in French oak barriques for at least 6 months.

ORGANOLEPTIC CHARACTERISTICS: ruby red colour enriched with violet reflections, characterized by very soft tannins and its persistent flavor and taste of very mature red fruits jelly, such as strawberry, blackberry and blueberry.

PAIRINGS: robust main coursers, lamb, game, aged cheese.

SERVING TEMPERATUR: Beetween 16-18°C.

ALCOHOL: 13% Vol.
